Applesauce Chai Muffins

I have a couple of grandsons who love these Applesauce Chai Muffins. One grandson can’t have dairy and the other one can’t have wheat, so this recipe is great! And the bonus? These muffins taste so good all the other grandkids love them, too!

APPLESAUCE CHAI MUFFINS

4 eggs

1 cup cinnamon applesauce

(page 32 of Eating Pure in a Processed Foods World®)

1/4 cup maple syrup

1/4 cup coconut oil

1/2 cup coconut flour

1 teaspoon baking soda

1-1/2 teaspoons chai spice 

1/2 cup chopped walnuts, optional

Preheat oven to 400o F. Line muffin tin with paper liners. In a large bowl, beat eggs with a mixer. Add next 3 ingredients and mix well. Stir in remaining ingredients. Pour into muffin liners. Bake 15 minutes.

Makes 12 muffins
