Brussels Sprouts and Kale Power Slaw

We’re excited about this salad! Not only is it super simple to make (get your food processor out and start shredding) it’s packed full of powerful nutrients and vitamins. Friends and family will love it!

Brussels Sprouts and Kale Power Slaw

1 cup shredded Brussels sprouts
2 cups chopped kale
1 cup shredded cauliflower
1 cup shredded cabbage
2 cups shredded broccoli
1 cup shredded carrots
1/2 cup chopped onions
1/2 cup sunflower seeds
6 slices crisp cooked bacon, crumbled

DRESSING:
1 cup yogurt (page 236)
1/4 cup honey
2 tablespoons apple cider vinegar
1/4 teaspoon sea salt
1/8 teaspoon pepper

Combine all salad ingredients in a large bowl. Stir dressing ingredients together in a small bowl. Pour over salad and toss to combine.

Makes 6 to 8 servings
