Since I enjoy dark chocolate, I am always interested in what the latest studies are saying about its health benefits. The one big take away in most articles is the rich concentration of antioxidants and polyphenols that are found in dark chocolate.  However, some articles suggest that many of these antioxidants and polyphenols can be lost in the processing stage. So, if you are looking to get the most nutrients from your chocolate, purchase an organic raw cacao powder and enjoy its many health benefits.

Chocolate Raspberry Torte

1/2 cup coconut oil
1 cup dark chocolate chips
1/2 cup honey
2 teaspoons vanilla
4 eggs
1/4 cup cocoa powder
1/2 teaspoon salt
1/2 cup ground walnuts
1 tablespoon coconut flour

Glaze

1/4 cup dark chocolate chips
1 teaspoon coconut oil
Raspberry syrup (page 203)

Raspberry Torte Rapsberries

Preheat oven to 350° F. Line the bottom of a round cake pan (or pie pan) with parchment paper and lightly butter paper. Place oil, chocolate chips and honey in a small pan. Stir constantly over medium-low heat until chips are melted. Remove from heat and stir in vanilla. While mixture is cooling, beat eggs with mixer in a medium bowl until frothy. Add melted chocolate mixture and rest of ingredients. Mix well. Spread in pan and bake 30 minutes. Cool completely in pan. Run a knife around edge of pan to loosen. Remove from pan. For glaze, melt chips and oil over low heat. Drizzle glaze on torte and serve with raspberry syrup.
