Creamy Cauliflower Soup

Once you’ve watched our video and know how to make your own nutritious chicken broth, this is a tasty, kid-friendly soup that’s quick and easy to make using your broth. (I have also made the variation of this soup and it’s just as creamy and delicious as the original recipe.)  A perfect meal to incorporate into your menu plan or during cold and flu season!

Creamy Cauliflower Soup

4 cups chicken broth
1 small onion, chopped
1 clove garlic, minced
3 potatoes, peeled and cubed
3/4 teaspoon sea salt
1/4 teaspoon pepper
1/4 cup heavy cream
1/2 large head cauliflower florets
1 cup shredded raw cheddar cheese

Place first 5 ingredients in a large sauce pan and bring to a boil over medium-high heat. Reduce heat, cover and simmer 20 minutes until vegetables are tender. Puree with an immersion blender (find the immersion blender on our Products We Use page. Add remaining ingredients and continue cooking until heated through.
Makes 4 servings.

 VARIATION: For a dairy-free, nightshade-free variation, make this soup with 1 whole large head of cauliflower florets and omit potatoes (potatoes are a nightshade vegetable). Substitute 1/2 cup coconut milk for the cream and cheddar cheese.
