If you are short on time, or have gotten behind on your meal planning, make this quick and easy dish. Simply sauté onion and spinach, add eggs, cheese, a little seasoning and bake. This is a great dish for breakfast, lunch or dinner that is loaded with antioxidants, fiber and protein. It is also very economical and easy on your food budget.
Crustless Quiche
2 tablespoons butter
1 cup chopped onion
1 (10 ounce) package frozen spinach, thawed and drained or 7 cups fresh spinach
6 eggs, beaten
2 cloves garlic, minced
2 cups shredded raw cheddar cheese
3/4 teaspoon salt
1/8 teaspoon pepper
Preheat oven to 350°F. Butter a 9-inch pie pan. Sauté onions in butter in a large skillet over medium-high heat until tender.
Stir in spinach and cook until excess moisture is evaporated.
In a large bowl, combine remaining ingredients. Add spinach mixture and stir.
Pour into prepared pan. Bake 25 to 30 minutes until eggs have set and are lightly brown. Let cool 5 minutes before serving.
