CURRIED CHICKEN SOUP
4 cups chicken broth
2 cups chopped cooked chicken
1 cup prepared navy beans
1 cup chopped onion
1 garlic clove, minced
1-1/2 cups chopped carrots
1 red pepper, chopped
1 cup diced tomatoes
1 tablespoon curry powder
1/8 teaspoon cayenne pepper
1 teaspoon sea salt
1/4 teaspoon pepper
1 cup coconut milk
3/4 cup fresh chopped cilantro, optional
Place first 8 ingredients in a large stock pot. Bring to a boil. Cover and reduce heat. Simmer 20 minutes or until vegetables are tender. Stir in spices and coconut milk. If desired, sprinkle cilantro in each bowl when serving.
