Deviled Eggs

There’s no need to wait for a special occasion, holiday or picnic to make Deviled Eggs. This healthy appetizer is an excellent source of protein, healthy fat and antioxidants.  For a quick, nutritious kid-friendly snack, peel a hard boiled egg and eat plain or with a little salt and pepper sprinkled on it.  You receive a lot of “bang for your buck” when adding eggs into your diet as a nutritious protein source.  It’s best to buy free-range organic eggs from a source you trust.

Peeling tip: Try gently cracking the entire shell of your hard boiled egg and then peel the shell away while holding under running water.

Deviled Eggs

DEVILED EGGS

12 eggs, hard boiled (page 152 of Eating Pure in a Processed Foods World®)
1/2 cup mayonnaise (page 77 of Eating Pure in a Processed Foods World® )
1 teaspoon prepared mustard
1/4 teaspoon paprika
1/4 teaspoon onion powder
1/8 teaspoon garlic powder
1/2 teaspoon sea salt
1/8 teaspoon pepper
1/8 teaspoon cayenne pepper, optional
Chopped chives, optional

Peel eggs and cut in half lengthwise. Scoop out yolks. Place yolks in a medium bowl and mash with fork until fine. Mix in remaining ingredients and stir. Spoon mixture into a quart size storage bag. Snip off corner of bag. Pipe mixture into egg white halves. Sprinkle with chives.

Makes 8 servings
