Easy Meatloaf/Meatballs

We’re big promoters of doubling recipes and freezing some to pull out as needed. If you’ve never done so, we encourage you to try it. Now is the perfect

time to begin filling your freezer with healthy meals! Our easy meatloaf/meatballs recipe is a great place to start.

If you decide to make it into meatballs, simply place the balls into a glass baking dish and spoon the glaze on top.  At this point, you can either bake it or place directly in the freezer to pull out, thaw and bake at a later date.

Note: This recipe is for a single meatloaf. If you double the ingredients, you can bake one to eat immediately and freeze one for later!

Easy Meatloaf/Meatballs

1-1/2 pounds ground beef
1 egg
1/3 cup finely chopped onion
1/3 cup tomato paste
1 teaspoon salt
1/4 teaspoon pepper
1 teaspoon dry mustard
1/4 teaspoon garlic powder
1 tablespoon dried parsley

GLAZE:
1/3 cup ketchup
1/4 teaspoon ground nutmeg
1/3 cup maple syrup
1 teaspoon dry mustard

Preheat oven to 350°F. In a large bowl, mix together meatloaf ingredients. Place in a glass loaf pan or form into balls and place in a 9 x 9 glass pan.

In a small bowl, mix together glaze ingredients and pour over meatloaf. Bake uncovered 1 hour. For meatballs, leave the glaze off and bake uncovered 30 minutes. Pour glaze over meatballs and continue baking an additional 15 minutes.

Makes 4 to 6 servings
