Easy Oatmeal Bars


4 cups oatmeal
3/4 cup coconut sugar
2/3 cup butter, melted
1/2 cup brown rice syrup
3/4 cup peanut butter, divided
1 tablespoon vanilla
1 cup dark chocolate chips

In a medium bowl, stir oatmeal, sugar, butter, rice syrup, 1/2 cup peanut butter and vanilla together. Press into ungreased 9×13 glass pan. Bake 20 minutes at 350. In a small saucepan, melt chocolate chips and remaining peanut butter on low heat. Spread over warm bars. Chill 30-45 minutes in refrigerator.

    What is rice syrup? Can you use maple syrup instead?

    No, maple syrup will not work in this recipe. We’ve found rice syrup at several whole food/coop stores. Enjoy!
