Easy Sausage and Rice Casserole in Instant Pot

Looking for a tasty, easy recipe that will satisfy and fill tummy’s of all ages? This recipe passed with flying colors in both our families – from our husbands to the youngest grandchild. It’s also delicious made with your leftover turkey broth after the holidays.


2 cups rice, soaked overnight in 4 cups warm water with 2 tablespoons lemon juice
2 pounds ground beef or pork (or 1 pound of each)
1 medium onion, chopped
1-1/2 teaspoons sea salt
1/8 teaspoon pepper
1 teaspoon dried basil

1-1/2 teaspoons poultry seasoning
1/2 teaspoon pumpkin pie spice
1/8 teaspoon cayenne pepper

3 cups chicken or turkey broth

Drain and rinse rice. Set aside.

Set instant pot to “sauté” setting. With the lid off, sauté meat and onions until brown. Add seasonings, rice and broth. Stir and push down so everything is submerged in broth.

Secure lid and move pressure valve to “sealing” position. Select “manual” setting and set timer to 10 minutes (use + and – buttons to adjust).

Allow pressure to naturally release 10 minutes. Move pressure valve to “venting” position and carefully remove lid. Stir and serve. This is delicious served with maple syrup drizzled on top.
