Chicken Fajita Soup

Fajita Soup

4 cups chicken broth
1 large onion, chopped
2 red bell peppers, chopped
1 green bell pepper, chopped
1 cup salsa
2 cups chopped cooked chicken
2 cups prepared black beans
2 tablespoons fajita seasoning mix
1 teaspoon sea salt

Place broth, onions, peppers and salsa in a large sauce pan.  Bring to a boil over high heat. Reduce heat, cover and simmer 20 minutes until vegetables are tender.  Add chicken, beans and seasoning mix. Continue cooking 10 minutes or until chicken is heated through.  Serve with your favorite toppings (cheddar cheese, avocado, cilantro, sour cream, etc.)

Makes 4 to 6 servings
