I don’t know about you, but some of our family members have been hit with colds and flu recently. They appreciated having broth on hand to quickly make up a batch of healing soup.The health benefits from broth are numerous. So much so that some people say it’s nature’s multivitamin in an easy-to-absorb form. Broth provides many healing amino acids and dozens of different essential minerals and electrolytes that support your immune system as well as your digestion. Nutritious broth also helps boost detoxification, helps protect joints and helps maintain healthy skin. This simple Fajita Soup recipe is made with chicken, peppers, onions and black beans in a delicious, somewhat spicy broth. Serve soup as is or top with your favorite toppings. This soup is sure to quench that craving for Mexican food while providing nutritional and healing benefits.

Chicken Fajita Soup

Fajita Soup

4 cups chicken broth
1 large onion, chopped
2 red bell peppers, chopped
1 green bell pepper, chopped
1 cup salsa
2 cups chopped cooked chicken
2 cups prepared black beans
2 tablespoons fajita seasoning mix
1 teaspoon salt

Place broth, onions, peppers and salsa in a large sauce pan.  Bring to a boil over high heat. Reduce heat, cover and simmer 20 minutes until vegetables are tender.  Add chicken, beans and seasoning mix. Continue cooking 10 minutes or until chicken is heated through.  Serve with your favorite toppings (cheddar cheese, avocado, cilantro, sour cream, etc.)

Makes 4 to 6 servings
