This week we’ve given you tips for healthier back-to-school breakfasts, lunches and snacks. Today we will complete the week with our favorite make-ahead freezer meals. During the hustle and bustle of getting back to school, you will appreciate the convenience of having meals made ahead of time, ready to pull out of the freezer and bake as needed.
We like to make double or triple batches of recipes when making freezer meals. A little extra time spent prepping multiple batches saves you lots of time in the long run. Here are some of our favorite make-ahead freezer meals: Hash Brown Casserole (pg. 51), Easy Sloppy Joes,
Meatloaf (pg. 192), Applesauce Meatballs,
Chicken Wild Rice Soup,
Vegetable Beef Soup (pg. 79), Summer Garden Casserole (pg.91),
Black Bean, Spinach and Zucchini Lasagna,
Beef Stew (pg. 101), White Chicken Chili (pg. 121), Chicken Casserole (pg. 145), Cheesy Potatoes (pg. 184), Squash Soup (pg. 227), Southwest Chili (pg. 244), Traditional Chili (pg. 261), and Enchilada Dish (pg. 263).
When making casseroles, it’s best to bake them 30 to 45 minutes and cool before freezing.
