I had some help freezing asparagus over the weekend. We enjoy frozen asparagus throughout the winter in soups or steamed as a side dish. Select young tender asparagus, wash and sort.⠀ Trim bottom of stalk and snap into even spear lengths.⠀
Blanch in boiling water.⠀
Drain off hot water and dip in ice water, drain and cool.
A salad spinner works well for this.
