Time to stock the freezer with your garden fresh carrots! From the garden to the freezer, you can enjoy the fresh flavor of carrots all winter long by simply freezing and adding them to your favorite dish.
Harvest by pulling carrots from the ground (pre-loosen soil with garden fork if tops break off) and cut off the greens.
Wash, peel and wash carrots again.
Slice carrots.
Blanch sliced carrots 3 minutes in boiling water. Drain and immerse in cold water until completely cool.
Drain and pack into freezer bags or containers. Seal, label and freeze. For more freezing information, check out page 26 in our book, Eating Pure in a Processed Foods World®. Check out the carrot section for some great recipes your family is sure to enjoy!
