Looking for a quick meal that can be prepared and ready to eat within 10 to 15 minutes? Make a fried egg sandwich! Eggs are an excellent source of protein, healthy fat and antioxidants. If you have a local source of farm fresh eggs, even better! When compared to store bought eggs laid from caged hens, eggs laid from free-range hens contained:

  •  1/4 less saturated fat
  •  1/3 less cholesterol
  •  2/3 more vitamin A
  • 2 times more omega-3
  • 3 times more vitamin E
  • 7 times more beta-carotene

FRIED EGG SANDWICH

1 tablespoon butter
1 or 2 eggs
2 pieces of toast (we like sourdough bread)
Melt butter in a small skillet over medium-high heat. Fry 1 or 2 eggs (we like broken yolks) and put between two pieces of buttered toast.

Makes 1 serving

VARIATION: Add any combination of bacon, ham, cheese, avocado, tomato, etc. for more deliciousness.
