Deciding what to make for lunch sometimes feels like a constant struggle. I love making a big batch of cold salad to eat for lunches. However, I’ve been getting a little tired of my salad recipes, so I created this chicken salad with some fruit in it. Grapes and pineapple give it just the right amount of sweetness!

Fruity Chicken Salad
3/4 cup mayonnaise (Page 77 of Eating Pure in a Processed Foods World®)
1 tablespoon lemon juice
1 teaspoon salt
1/4 teaspoon pepper
4 cups shredded cooked chicken
1 cup halved grapes
1 cup chopped celery
1 cup chopped pineapple
1 bunch green onions, chopped
1/2 cup chopped pecans
Mixed Greens, optional
In a large bowl, mix together mayonnaise, lemon juice, salt and pepper. Add remaining ingredients. Serve on mixed greens if desired.
Makes 4 to 6 servings
