Gluten-Free Chocolate Chip Cookies

I grew up in the country with several cousins, aunts and uncles, and grandparents living a few miles from our farm. I have fond memories of visiting my Great-Grandma Sunderland who always had a big cookie jar filled with chocolate chip cookies on her kitchen counter. When I’d come to visit, she would go in her bedroom, bring out a small folding game table and we’d play Chinese checkers while eating a snack of chocolate chip cookies.  Just thinking about it brings a smile to my face.

Fast forward a few years, and my grandchildren are now having chocolate chip cookies with me!  We’ve recreated a healthier version of those cookies using gluten-free flours and natural sugar.  Remember to read labels when you are purchasing your ingredients. It took some testing and tweaking, but these little sweet treats were worth the wait! Now you can make these delicious Gluten-Free Chocolate Chip Cookies and begin making your own memories with your children and grandchildren.

Chocolate Chip Cookies



2 eggs
1/3 cup coconut oil
1/2 cup coconut sugar
2 teaspoons vanilla
2-1/2 cups almond flour
1/4 cup coconut flour
1 teaspoon baking soda
1 teaspoon sea salt
1/2 cup dark chocolate chips

Preheat oven to 350ºF. In a large bowl, beat eggs with a mixer until frothy. Mix in oil, coconut sugar and vanilla. Add flours, soda and salt. Stir in chips. Drop by teaspoonfuls onto parchment lined baking sheets. Flatten slightly. Bake 10 to 12 minutes until slightly golden on edges. Remove from oven and let sit on baking sheet 5 minutes before placing on cooling rack.
