Gluten-Free Date and Walnut Bread

Looking back and thinking about my childhood memories of Christmas goodies, I believe Date Bread and Date cookies made the baking list every year (great memories of my mom making these sweet treats). This newly created wholesome Date and Walnut Bread is a little different than my mom’s but equally tasty and delicious. It is moist, full of flavor and packed full of health benefits.

The bananas are an excellent source of potassium, fiber, magnesium and manganese; the dates are a natural sweetener and is thought to decrease cholesterol and boost bone health; the walnuts provide protein, copper, vitamin B6 and iron. DATE & WALNUT BREAD

3 eggs
2 large ripe bananas, mashed
1/3 cup maple syrup
2 tablespoons butter or coconut oil
1 cup almond flour
1/4 cup plus 1 tablespoon coconut flour
1 teaspoon baking soda
1/2 teaspoon sea salt
1/2 cup chopped dates
1/2 cup chopped walnuts
1 apple, finely chopped

Preheat oven to 350°F. Line a 9 x 5 inch loaf pan with parchment paper. In a large bowl, beat eggs with a mixer until frothy. Mix in bananas, maple syrup and butter. Add almond flour and remaining dry ingredients. Stir in dates, walnuts and chopped apples. Pour batter into loaf pan and bake 60 to 70 minutes.

Makes 1 large loaf

VARIATION: For 3 mini-loaves, line pans with parchment paper and bake 35 to 45 minutes.
