Granola Snacks are another lunch box treat to bring to work or school. Packed full of nutrition, easy to make and fun to eat – what more could one ask for? Enjoy!
1/2 cup almond butter or peanut butter
1/3 cup honey
1/4 cup coconut oil
1 teaspoon vanilla
1 cup rolled oats
1 cup shredded coconut
1/3 cup pumpkin seeds
1/3 cup dried cranberries
In a medium saucepan, melt nut butter, honey and coconut oil over medium-high heat, stirring constantly. Remove from heat. Stir in remaining ingredients. Refrigerate 20 to 30 minutes. Roll into bite size snack balls and place on parchment lined baking sheet. Refrigerate to set.
