Homemade Ketchup

One food that generally contains corn syrup is ketchup.  Increasingly we hear more about the use of corn syrup or high fructose corn syrup in processed foods.  You can avoid this controversy and its possible health risks by making your own ketchup full of rich nutrients and antioxidants.

Homemade Ketchup

2-1/4 cups tomato paste (tomato paste recipe)Ketchup
1/2 cup apple cider vinegar
1 onion, finely chopped
1/8 teaspoon garlic powder
1/4 teaspoon ground cinnamon
1/4 teaspoon ground cloves
1/4 teaspoon ground allspice
1/4 teaspoon celery seeds
1/4 teaspoon red pepper flakes
1 teaspoon paprika
2 teaspoons salt
1/4 cup honey

Combine all ingredients except honey in a medium saucepan.  Simmer uncovered on low heat 30 minutes, stirring occasionally.  Puree with an immersion blender.

Add honey.  Continue cooking until desired thickness, stirring frequently to prevent sticking.  Cool and store in refrigerator.

If canning, ladle hot ketchup into sterilized jars and process 10 minutes in hot water canner.

Makes 3 cups
