Italian Quinoa Salad

1 head romaine lettuce, washed and chopped

6 large kale leaves, stems removed, washed and chopped

1 cucumber, diced

1 cup quartered cherry tomatoes

1/2 cup sliced almonds

1 cup Kalamata olives

2 cups prepared quinoa, cooked and cooled

Place all ingredients in a large bowl. Drizzle Italian (page 150 of our book Eating Pure in a Processed Foods World®) or Caesar Dressing (page 151) over salad. Toss well and serve immediately.

Makes 4 to 6 servings
