I can’t believe we forgot to put this recipe in our book! The Italian Dressing is in the book, so I guess it was only a “half-bad” on our part! This is a colorful salad that’s packed with fantastic health benefits including antioxidants to help fight free-radicals in your body. It’s a delight to look at as well as healthy!

Italian Salad

Italian Salad Recipe

4 cups cauliflower florets
4 cups broccoli florets
2 cups diced tomatoes
1/4 cup diced onions
1/2 cup black olives
1/2 cup sliced mushrooms
1/2 cup Italian Dressing (page 150 of our book Eating Pure in a Processed Foods World®

Combine all salad ingredients in a large bowl. Toss with Italian Dressing and marinate 2 hours before serving.

Makes 8 to 10 servings
