Mini Pecan Pies

During the holiday season we often think about our loved ones that are no longer with us. Just having a pecan pie on the table brings back memories of my dad and my father-in-law. Each of them loved pecan pie. You could count on this pie being part of our dessert menu every year.

This mini pecan pie recipe includes a healthier twist on the traditional pie, but it is equally tasty! It is quick to stir-up, bake-up and best of all, eat-up!

Mini Pecan Pies

1/4 cup butter
1 cup maple syrup
3/4 cup coconut sugar
1/4 teaspoon salt
2 teaspoons vanilla
4 eggs, beaten
1 1/4 cups chopped pecans

Preheat oven to 350 F. In a medium saucepan, combine butter, maple syrup, sugar and salt. Bring to a low boil and simmer 3 minutes. Remove from heat and cool 10 minutes.Pecan Pie in Pan Add vanilla and eggs. Blend with an immersion blender (you can also use a mixer) until smooth. Add chopped pecans.Making Pecan Pies  Pour mixture in 6 small ramekins (fill about half full). Bake 30 minutes or until center is set. Cool and enjoy.Mini Pecan Pies Feature

This can also be placed in a pie shell to make a delicious pie!
