I brought these No-Bake Chocolate Cookies to a potluck recently and came home with an empty container and requests for the recipe. There are a few reasons I like to make them. I usually have the ingredients on hand, they are quick and easy to make, I only have one pan to wash and everybody loves them!
No-Bake Chocolate Cookies
1/3 cup coconut oil
1/4 cup honey
1/3 cup peanut butter or almond butter
2 tablespoons cocoa powder
1 teaspoon vanilla
1/2 teaspoon sea salt, divided
2 cups shredded coconut
Place oil, honey, nut butter, cocoa, vanilla and 1/4 teaspoon salt in a medium saucepan. Bring to a boil over medium-high heat, stirring constantly. Remove from heat and stir in coconut. Drop by small teaspoonfuls onto parchment lined baking sheet. Sprinkle 1/4 teaspoon salt over tops of cookie drops.
Place baking sheet in refrigerator to harden and set cookies. Remove from baking sheet and store in fridge until ready to serve.
