No Bake Oatmeal Fudge Bars

One of our old time favorites recreated with healthier ingredients – Oatmeal Fudge Bars! Kids of all ages will enjoy making and eating these delicious morsels!


3/4 cup butter
1/2 cup coconut sugar
2 teaspoons vanilla
1/4 teaspoon salt
3/4 cup peanut butter or almond butter, divided
3 cups rolled oats
1 cup dark chocolate chips

Butter a 9 x 9 inch glass pan. In a large saucepan, melt butter over medium heat. Add coconut sugar and 1/4 cup peanut butter. Cook 2 to 3 minutes, stirring constantly. Stir in vanilla, salt and oats. Press half of mixture into prepared pan. Melt 1/2 cup peanut butter and chocolate chips in a small saucepan over low heat. Gently spread over bars. Crumble the remaining oat mixture over the chocolate layer. Cover and refrigerate several hours. Bring to room temperature before cutting and serving.

 Makes 16 bars
