It’s peach season! And I decided to make a variation of our strawberry pie using my last six beauties to make a No-Bake Fresh Peach Pie. I had a pie crust in the freezer which I let thaw while I was peeling my peaches. Within one half hour I had a delicious dessert that everyone loved!
PEACH PIE
6 cups fresh peaches, peeled & sliced
1/3 cup honey
1 – 1/2 tablespoons unflavored gelatin
1 tablespoon lemon juice
1 pie shell, cooked and cooled
Whipped cream (optional)
Wash peaches, peel and slice. Place 1 cup peaches in a 2 quart pan. Add honey. Sprinkle gelatin over all. Bring to a boil on medium heat and cook 5 minutes, stirring constantly. Remove from heat and add lemon juice. Refrigerate until mixture begins to thicken around edges. Fold in remaining 5 cups peaches. Pour mixture into baked pie shell and chill until set. Top with whipped cream before serving.
Makes 8 servings
VARIATION: To make it gluten-free, simply pour into a greased pie pan and chill.
