Oatmeal Pie - Farm Girl Fresh

Oatmeal Pie

Looking for a great alternative to the traditional pecan pie for the holidays? This oatmeal pie recipe was created for family members that have never experienced the delicious flavor of a pecan pie due to tree nut allergies (my son-in-law). This pie is nut free and gluten free! A great option for other family members that struggle with gluten sensitivities.

This pie is quick to stir-up, bake-up and best of all, eat-up!

4 eggs, beaten
1/4 cup butter (melted)
1 cup maple syrup
3/4 cup coconut sugar
2 teaspoons vanilla
1/4 teaspoon salt
1 tablespoon coconut flour
1/2 cup rolled oats

Preheat oven to 350 F. Butter 4 ramekin or custard cups. In a medium mixing bowl, beat eggs until frothy. Mix in butter, maple syrup, coconut sugar and vanilla. Mix well. Add salt, coconut flour and oats. Mix.

Pour evenly into ramekins. Bake 30 minutes or until knife comes out clean. Cool to allow filling to firm up. Top with ice cream or a dollop of whipped cream (optional) for an absolutely divine dessert! Both our Traditional Whipped Cream and Ice Cream recipe can be found on page #37 of our “Eating Pure in a Processed Foods World®” book.

Makes 4 servings

VARIATION: This recipe can also be put into an 8” pie shell to make a delicious oatmeal pie! Bake 40 to 45 minutes. Cool and enjoy!
