Oats, Nuts ‘N Berries Granola

We love granola! It is a wonderful snack for anytime, anywhere that can be enjoyed by all ages. We have a delicious gluten-free granola in our book and wanted to share this equally delicious, alternative recipe with you. Check out our upcoming blog where we will discuss the different types of oats and chocolate chips available in the market place and why we use the ones we do.

Oats, Nuts ‘N Berries Granola

3 cups rolled oats
1 cup almonds
1 cup pecans
1 cup shredded coconut
1 tablespoon ground cinnamon
1/2 teaspoon sea salt
1/4 cup coconut oil
1/3 cup honey
1 tablespoon vanilla
1 cup dried blueberries, raspberries or strawberries

Preheat oven to 250°F.  Line 2 rimmed baking sheets with parchment paper.  Mix first 6 ingredients in a large bowl.  Warm coconut oil, honey and vanilla in a small pan and pour over dry mixture.  Toss well and spread on baking sheets.  Bake 1 hour, stirring occasionally.  Remove from oven and cool.  Add dried fruit and store in airtight container at room temperature.

Makes 7 cups

VARIATION: For you chocolate lovers, substitute dark chocolate chips for berries.

    Our bodies all react differently to foods. If your body is sensitive to oats, you may need to soak and dehydrate them before you make this recipe.
