Pear Blueberry Crisp

What do you make when you’re tired of preserving and have a partial case of pears ripening in the fridge? Pear Blueberry Crisp!

This turned out to be a simple dessert that I made in the morning with ingredients I had on hand. After cooling, I put it in the fridge not knowing when we would eat it. Later that afternoon, we got unexpected company and it was a delicious treat to serve at the end of our meal.

Pear Blueberry Crisp

6 pears, peeled, cored and sliced

1-1/2 cups blueberries, fresh or frozen

1-1/2 teaspoons ground cinnamon

1-1/2 tablespoons gelatin

1-1/2 tablespoons honey

Topping:

1 cup rolled oats

1/4 cup date sugar

1/2 teaspoon ground cinnamon

1/4 cup butter

Preheat oven to 350o F. In a large bowl, stir pears, blueberries, cinnamon, gelatin and honey together. Place in a buttered 9 x 9 inch glass pan. Mix topping ingredients together and sprinkle evenly over the pear blueberry mixture. Bake 25 to 30 minutes.
