Potato Vegetable Soup

During flu season, we try to incorporate as much broth into our diets as possible.  The nourishing benefits of broth help fortify the body and ward off sickness.  Our Potato Vegetable Soup is an easy dish to use chicken broth in and kids LOVE this soup!


6 large potatoes, washed and cubed
2 medium carrots, sliced
4 stalks of celery with leaves, sliced
8 cups chicken broth
2 pounds ground beef or venison
1 tablespoon onion powder
1-1/2 teaspoons sea salt
1/2 teaspoon pepper

Place the potatoes, carrots, celery and broth in a large stock pot. Bring to a boil over medium-high heat.
Potato Vegetable SoupCover, reduce heat and simmer 20 minutes. Brown beef or venison in a large skillet.
Potato Vegetable SoupSprinkle onion powder over meat while browning. Drain and add browned meat, salt and pepper to soup.
Simmer an additional 20 minutes.
