Pumpkin Oat Bread

4 eggs

1 cup pumpkin puree

1/2 cup maple syrup

1/2 cup date sugar

1/4 cup butter or coconut oil

2 teaspoons vanilla

1 cup rolled oats, ground to flour

1 teaspoon baking soda

2 teaspoons pumpkin pie spice

1/2 cup chopped walnuts

3/4 cup chocolate chips, optional

Preheat oven to 350o F. In a large bowl, beat eggs with a mixer until frothy. Mix in pumpkin puree, maple syrup, date sugar, butter and vanilla. Grind oats in a blender, bullet or coffee grinder. Add oats and remaining dry ingredients. Stir in walnuts (and optional chocolate chips). Pour batter into a buttered loaf pan and bake 35 to 40 minutes. This recipe can also be divided into 3 small loaf pans. Bake 25 minutes or until a toothpick inserted into the center comes out clean.

Makes 1 large loaf or 3 small loaves
