I begin preparing this breakfast by soaking the oats the night before. Soaking helps break down the phytic acid in the oats making it more digestible.

In the morning, I rinse and drain them. I like to use my food processor to chop the nuts. This is a large recipe and can be baked in any of the following pans:

two muffin pans; one muffin pan and one 8 x 8 pan; or one 9 x 13 pan.

5 cups rolled oats, soaked overnight

2 tablespoons lemon juice

1 cup walnuts, finely chopped (food processor works well)

1 cup pecans, finely chopped (food processor works well)

2 cups pumpkin puree

3 eggs

1/2 cup ghee or soft butter

2/3 cup maple syrup

2 teaspoons vanilla

1-1/2 tablespoons pumpkin pie spice (pg. 189)

1 teaspoon sea salt

Place oats in a large glass bowl. Cover with water and stir in lemon juice. Soak overnight (8 to 10 hours). Soaking helps break down the phytic acid in the oats making it more digestible.

In the morning, preheat oven to 350o F. Drain and rinse soaked oats. Mix together the remaining ingredients in a large mixing bowl. Stir in the drained oats. Spoon batter into greased or lined muffin pans. Bake 40 to 45 minutes. Serve warm with cream or cold like a muffin.
