QUINOA BLACK BEAN SALAD w/ CUMIN-LIME DRESSING
3 cups quinoa cooked and cooled
1 avocado, chopped
1 cup quartered cherry tomatoes
1 large red bell pepper, chopped
2/3 cup diced red onion
1/3 cup chopped cilantro
1 large clove garlic, minced
3 tablespoons lime juice
1/2 teaspoon cumin
1 teaspoon salt
Mix first seven ingredients together in a large bowl. In a small bowl, whisk together the dressing ingredients. Pour dressing over salad and mix thoroughly. Serve.
This salad can also be stored in an air tight glass container in the refrigerator overnight. It’s a great make-ahead salad that tastes delicious the next day!
