Raspberry and Fresh Greens Salad

How well are you doing with menu planning during these summer months? I know it can be difficult. (I do much better in the winter months.) With baseball games, community education activities, camps, vacations, swimming and numerous other outdoor activities, it can be hard to stay on task with menu planning. Another interruption (a good one) to our menu planning can be the ripening of fruits and vegetables in our garden. My week started out with a menu plan until I realized my raspberries were producing a bumper crop. I now needed to incorporate more recipes using these delicious berries in my meals. This Raspberry and Fresh Greens Salad is one of those recipes. You will be amazed how quickly you can prepare this salad for lunch or dinner. Raspberry Salad


8 cups fresh mixed greens
2 cups fresh raspberries
1 small red onion, sliced
1/3 cup slivered almonds or walnuts
Raspberry vinaigrette, (page 203 of Eating Pure in a Processed Foods World®)

In a medium bowl, combine fresh greens, raspberries, onion and almonds. Toss. Place salad on plates and drizzle vinaigrette over salad.

Makes 6 servings
