We encourage you to freeze rhubarb when it is in season. It’s easy. Try freezing some this season to enjoy all the healthy benefits from rhubarb throughout the rest of the year!
Prepare rhubarb sauce according to recipe. Puree with an immersion blender. Chill. In a large bowl, whip cream with a mixer until stiff peaks form. Gently fold in cold rhubarb sauce. Place in an 8 x 8 glass pan. Freeze 1 hour, stirring every 15 minutes. Cover and freeze until firm.
Makes 6 to 8 servings
VARIATION:
Add 2 cups strawberries and an additional 1/4 cup water to the rhubarb sauce and prepare sauce according to recipe. Add 1 additional cup of heavy cream and whip as directed. Place combined mixture in a 9 x 13 glass pan. Freeze 1 to 1-1/2 hours, stirring every 15 minutes.
