Slow Cooker Chicken Alfredo

“This is the best tasting quinoa I’ve ever had!,” was my husband’s reply each time he taste tested this recipe. With 5 minutes or less of prep time, this combination of ingredients cooking in a slow cooker makes for a delicious, hot meal.

4 boneless, skinless chicken breasts
1 cup quinoa
2 cups chicken broth
1 cup sour cream
1/2 cup shredded Parmesan cheese
1/2 cup fresh chopped basil or 1 tablespoon dried basil
3 cloves garlic, minced
1 teaspoon sea salt
1/4 teaspoon pepper

Place chicken in a slow cooker. Stir together remaining ingredients in a medium bowl.
Pour over chicken and cook on low 5 to 6 hours.

Makes 4 servings

  1. I have made this recipe twice and it turns out delicious! The only problem I am having is the quinoa along the edges of my cooker always burns/over cooks. Have you had this happen or how do you avoid this?

    Hi Lauren,

    Yes, our quinoa gets brown along the edges, also. If possible, it helps to stir it occasionally.
