Spinach Crust Veggie Pizza

This Spinach Crust Veggie Pizza is amazingly delicious!  Who knew a gluten-free alternative could taste this great while providing so many nutritional benefits? Feel free to substitute your favorite pizza toppings when making this recipe.  You might find yourself incorporating it weekly into your menu plan!

SPINACH CRUST VEGGIE PIZZA

4 cups spinach
1 clove garlic
1 tablespoon Italian seasoning (page 125)
1 egg
1 teaspoon lemon juice
1 cup shredded raw cheddar cheese, divided
1/2 cup grated Parmesan cheese, divided
1/3 cup pizza sauce (page 257)
1/3 cup sliced black olives
1/3 cup sliced mushrooms
1/3 cup chopped onions
1/3 cup chopped red peppers, optional

Preheat oven to 400°F.  Place first five ingredients in a food processor.  Add 1/2 cup cheddar cheese and 1/4 cup Parmesan cheese.  Pulse until well blended.  Spread in a thin layer on a pizza stone or on a greased rimmed baking sheet.

Bake 15 to 20 minutes until slightly brown.  Top with pizza sauce, veggies and remaining cheese.  Bake an additional 10 to 15 minutes.
