A friend of mine made this strawberry beet salad and I loved it! The combination of beets and strawberries is so unique and delicious with a splash of balsamic vinegar and honey.
If you buy strawberries, keep in mind that strawberries are almost always on the Dirty Dozen list each year. Which means strawberries are often tested very high for pesticide residue. And a lot of strawberries are sprayed with a fungicide to prevent mold prior to harvest. We always buy organic strawberries and better yet we like to buy them local so we can ask (every year) if they’ve sprayed anything on them.
