Sweet ‘N Spicy Asparagus and Broccoli

It’s getting closer. The time when fresh asparagus starts showing up on our coop shelves and in our grocery stores (some of our friends to the south might already be enjoying this treat). And then, soon to follow, our own asparagus patch gifting us with those need-to-pick-daily asparagus spears. So with the season soon upon us, we have created this delicious Sweet ‘N Spicy Asparagus and Broccoli side dish. This asparagus-broccoli combination is high in fiber, and packed with vitamins A and C. Don’t plan on having any leftovers once this dish gets passed around the table!

SWEET ‘N SPICY ASPARAGUS AND BROCCOLI

2 tablespoons sesame oil
1-1/2 pounds asparagus, trimmed and sliced diagonally
1 pound broccoli florets
2 tablespoons water
1/4 cup honey
1/4 cup coconut aminos
1 teaspoon ground ginger
1 teaspoon crushed red pepper

In a small bowl combine honey, coconut aminos, ginger, and red pepper. In a large skillet, sauté asparagus and broccoli in oil 2 minutes. Add 2 tablespoons water to pan. Stir.
Cover and steam vegetables 6 minutes or until tender-crisp. Add honey mixture and cook uncovered approximately 4 minutes until glaze is slightly thickened.
Makes 4 to 6 servings
