Sweet Potato Casserole

Have you ever had Sweet Potato Casserole? We recreated this recipe with healthier ingredients! We replaced the refined sugar, brown sugar, milk and flour

with maple syrup, coconut sugar, coconut milk and pumpkin pie spice!

Sweet potatoes are loaded with vitamin C and contain antioxidant and anti-inflammatory components. They are available most of the year in all parts of the country. This nutritious side dish isn’t just for the holidays but all year long!

4 cups sweet potatoes, peeled and cut in 1-1/2 inch pieces
1/4 cup maple syrup
1/4 cup butter
1/4 cup coconut milk
2 eggs

1 cup chopped pecans
1/4 cup coconut sugar
1/4 cup butter
1 teaspoon pumpkin pie spice

Preheat oven to 350° F. Steam sweet potatoes in a covered pan 15 to 20 minutes until tender.

Place in a large bowl with remaining ingredients. Puree with an immersion blender.
Place in a greased 8 x 8 glass pan. Combine topping ingredients in a small bowl. Sprinkle on top of pureed mixture. Bake 35 to 40 minutes until golden brown. Allow dish to set 8 minutes before serving.
Makes 6-8 Servings
