This delicious high-protein, high-fiber salad is packed full of nutrients! A while back, we took samples of our Three Bean Salad to one of the coops who sells our beans. Everyone loved it and was asking if the in-store deli had it available for purchase! Here’s the recipe so you can make it fresh, yourself, using our black beans and light red kidney beans. Our beans are grown on our certified organic farm in Minnesota. Meet the farmer who grow these nutritious, specialty beans to know where your food comes from. This colorful salad is a great side dish to bring to family gatherings or potluck dinners!
THREE BEAN SALAD
2 cups frozen green beans
2 cups prepared black beans
2 cups prepared kidney beans
1/4 cup chopped onion
4 stalks celery, chopped
1/2 red bell pepper, chopped
1/2 yellow bell pepper, chopped
1-1/2 teaspoons sea salt
DRESSING:
1/3 cup honey
1/2 cup apple cider vinegar
1/4 cup olive oil
1/2 teaspoon Dijon mustard
1/2 teaspoon paprika
1/8 teaspoon pepper
Steam green beans in a covered pan 3 minutes (refer to steaming, page 27). Cool. In a large bowl, combine all beans, onions, celery, peppers and salt. Cover and refrigerate 1 hour. Drain off excess liquid. In a small bowl, whisk together dressing ingredients and pour over salad. Toss and refrigerate several hours.
