Zesty Mushroom Soup

This Zesty Mushroom Soup is for all you mushroom lovers (my hubby included). It’s made with sautéed mushrooms (those little powerhouses of nutrition), onions, garlic, carrots and celery along with a little spicy salsa that will make your taste buds do a “happy” dance.
This soup is easy to prepare and can be ready in just 40 minutes from start to finish.


1/4 cup sesame oil
1 large onion, chopped
8 cloves garlic, chopped
1 1/2 cups celery, chopped
1 1/2 cups carrots, chopped
6 cups chicken broth
1/2 cup salsa (page 258 – traditional)
1 teaspoon salt
1/4 teaspoon pepper
1 tablespoon butter, or ghee
1 pound crimini mushrooms, sliced or chopped
1/2 cup coconut milk

In a large skillet, sauté onions, garlic, celery and carrots in oil 7 minutes over medium-high heat. Place sautéed vegetables in a large sauce pan with broth, salsa, salt and pepper. Bring to a boil over medium-high heat. Reduce heat, cover and simmer 15 minutes.
Sauteed Vegetables for Zesty Mushroom Soup
Using same large skillet, sauté mushrooms in butter 5 minutes until lightly browned. Stir into soup. Add coconut milk.
Mushrooms for Soup
Continue cooking 5 minutes.
